PURPOSE:To obtain the subject concentrate having excellent fluidity and useful as food additive, etc., by removing insoluble residues, etc., from soybean protein whey, etc., removing carbohydrates from the obtained purified water-soluble part containing carbohydrates, etc., adjusting the pH of the obtained concentrated liquid below a prescribed level and concentrating the product. CONSTITUTION:Soybean protein whey or its treated liquid is purified by removing insoluble residues, proteins and coloring materials to obtain a water-soluble part containing carbohydrates and soybean mineral components. The water-soluble part is subjected to electrodialysis to remove the carbohydrates and the obtained electrodialyzed concentrated liquid containing the soybean mineral components is concentrated after adjusting the pH to <=5 to obtain the objective concentrate. The concentrate contains [in terms of wt.% in the concentrate powder (total solid content of 96-98wt.%) 20-40wt.% of soybean oligosaccharides, 60-80wt.% of ash, 5-25wt.% of K, 1-10wt.% of Ca, 0.2-2wt.% of Mg and 0.2-2wt.% of Na. |
