The water-soluble part is subjected to electrodialysis to remove the carbohydrates and the obtained electrodialyzed concentrated liquid containing the soybean mineral components is concentrated after adjusting the pH to <=5 to obtain the objective concentrate. The concentrate contains [in terms of wt.% in the concentrate powder (total solid content of 96-98wt.%) 20-40wt.% of soybean oligosaccharides, 60-80wt.% of ash, 5-25wt.% of K, 1-10wt.% of Ca, 0.2-2wt.% of Mg and 0.2-2wt.% of Na.
