PURPOSE:To obtain the subject food useful for soybean milk, bean curd, etc., readily edible and drinkable, having excellent flavor by inoculating ground soybeans with cells of a fungus, decomposing a harshness component and removing the cells. CONSTITUTION:Ground soybeans or a filtrate of ground soybeans is inoculated with cells of a fungus of the genus Saccharomyces having ability of decomposing at least one of isoflavone and saponin, a harshness component is decomposed with the cells, the cells are removed and the material is subjected to given processing treatment to give the objective food. |
