PURPOSE:To obtain uniform noodle mass without coarseness of density of long strips of noodle by subjecting a long strip group of noodle housed in a frame mold to frying treatment under specific conditions. CONSTITUTION:A long strip group of noodle obtained by an ordinary method is packed into a frying frame mold 11 having many holes in at least the bottom and a part corresponding to about 90% of depth of frame mold from the bottom is immersed in frying oil 17 in a frying treatment tank 16 to carry out frying treatment. At the same time, hot oil having nearly same temperature as the frying oil is uniformly showered from an addition apparatus 20 onto the upper surface of the long strip group. |
