The procedure for opening oysters (H) includes a previous stage during which to coupling means (1) are stuck on the two valves of the shell. The oysters are opened by an apparatus (2) comprising first and second coupling hooks (25,26) complementary to the shell coupling. These hooks are located on separable parts (20,23) of the apparatus.
