PROBLEM TO BE SOLVED: To obtain a stabilized matrix of spray-dried powder that can automatically emulsify, when it is added to an aqueous medium by drying a specific suspension of β-sitosterol not via defoaming and homogenizing steps and obtain the subject water-dispersible sterol preparation that is useful for food and beverage products. SOLUTION: Effective amounts of a monofunctional surfactant as polyoxyethylene monopalmitate sorbitan or the like and a polyfunctional surfactant sorbitan monooleate or the like are mixed to form a water-surfactant mixture. Then, β-sitosterol is admixed to the water-surfactant mixture to form a β-sitosterol suspension. The resultant suspension is dried without the steps of defoaming and homogenization, to prepare the objective water-dispersible β-sitosterol. Instead of β-sitosterol, oryzanol is used to preferably prepare a water-dispersible oryzanol. |
