PROBLEM TO BE SOLVED: To provide a Chinese seasoning composition capable of being simply and mainly used for seasoning foods at homes, having excellent cookability and preservability and having a new flavor, especially a rich taste. SOLUTION: This Chinese seasoning composition comprises a shellfish extract and at least one ingredient material selected from dried scallop, dried Atrina pectinata, thermally cooked scallop, thermally cooked Atrina pectinata and dried crustacean. The ingredient material-free portion of the Chinese seasoning composition has a viscosity of 500-10,000 milli.pascal.sec, and is thermally treated at 80-135 deg.C for 10-90 min. |
