PROBLEM TO BE SOLVED: To provide a method for removing harshness for green juice derived from leaves of Japanese yam, which is easily drinkable having less grassy-smell and harshness, and also less drug smell, and which can easily supply dietary fiber, various kinds of vitamins, calcium and an iron component, comprising dipping leaves of Japanese yam in a liquid which is prepared by dissolving any one of ash, pulverized bamboo charcoal and pulverized wood charcoal in weak alkaline water to remove harshness so that the leaves of Japanese yam themselves become less in grassy-smell and harshness. SOLUTION: The method for removing harshness is carried out as follows: leaves of Japanese yam is dipped n a liquid which has been prepared by dissolving any one of ash, pulverized bamboo charcoal and pulverized wood charcoal in weak alkaline water; subsequently the leaves are washed with weak alkaline water to remove harshness; and the treated leaves are subjected to freeze-dry fine-pulverization, roast fine-pulverization or amputation liquefication. This method uses no chemical. |
