<P>PROBLEM TO BE SOLVED: To provide a pectinase produced by a yeast having copper resistance and an ability to take copper into the yeast cell in a high concentration, a pectinase having the copper resistance and a high activity under a wide condition and the use thereof, and a production method of galacturonic acid and vitamins. <P>SOLUTION: The yeast having the resistance in copper in a high concentration and the pectinase produced by the yeast are provided. Especially, the pectinase produced by a copper-resistant yeast, Cryptococcus sp. N6 strain, separated from abyssal floor mud is provided. As a result, pectin can be decomposed in the presence of copper ion in a high concentration by the yeast or the secreted pectinase and the pectin can be decomposed at a low temperature. <P>COPYRIGHT: (C)2004,JPO |
