An enzymatic composition for deodorizing fats comprises a proteolytic enzyme, a chelating or sequestering agent, a non-ionic emulsifying agent and an aqueous carrier. The enzyme may be ficin, papain, bromelin, fungal protease or a mixture of enzymes derived from bacterial flora of grease traps or septic tanks. The sequestering agent may be disodium dihydrogen versenate, sodium α-glucoheptonate or hydroxyethyl ethylene diamine tetra-acetic acid trisodium salt. The emulsifier may be nonylphenoxy poly (ethyleneoxy) ethanol, poly oxyethylene sorbitan monostearate or ethoxylated straight chain alcohols with 10-18 carbon atoms. The composition is preferably in the form of an aqueous solution in which the enzyme is active at 30-75‹ C. and a pH of 3À5 to 7. The composition preferably includes an activator for the enzyme, e.g. a sulphydro compound, cyanides, sodium bisulphite, H 2 S or other sulphides, and an adsorbent e.g. an acidic clay and/or charcoal.
