[Also in Divisions B1 and C2] A foodstuff or feeding stuff, e.g. margarine, an artificial calf milk, mayonnaise, salad sauce or baking additive contains as emulsifying gent a modified plant phosphatide, e.g. soya lecithin or rape seed, obtained by a process in which an aqueous emulsion of an unhydrolysed plant phosphatide at a pH of 2 to 12 is partially hydrolysed by heating at 50-100‹C. and the modified phosphatide is separated from the aqueous medium when its hard water half-value time for emulsification of oil is at least 0.2 hour. The artificial calf milk may be prepared by mixing water with a premix containing fat, modified phosphatide emulsifier, skim milk powder and/or whey powder and adding one or more of the following ingredients: sugar, vitamins, antibiotics, starch and mineral salts. |
