PROBLEM TO BE SOLVED: To provide a method for producing a dried ingredient having at least one characteristic in the following characteristics: (1) having a flavor or texture originally possessed by the food material; (2) being easily recovered to the original shape not only by adding hot water but also by adding cold water, soup or dairy products such as milk; and (3) keeping the original shape of the food material of the raw material after the recovery. SOLUTION: This method for producing the dried ingredient comprises cutting the food material into a desired largeness, enclosing the cut food material in a bag having heat resistance, heat-treating the resultant bag to prepare the ingredient, and freezing and drying the prepared ingredient to produce the dried ingredient. |
