摘要 PROBLEM TO BE SOLVED: To provide a white sauce having white, glossy and shining appearance, hardly causing pasty feeling not only just after the production but also after being cooled, and having smooth feeling. SOLUTION: This sauce-like food composed of flour and/or starch, oil and fat, and a water-based raw material is obtained by preparing a roux, mixing and emulsifying the oil and fat, and the water-containing raw material therewith, and subjecting the resultant product to stirring treatment while cooling the product. The sauce-like food is in a state in which bubbles are included, and a phenomenon of so-called demulsification of coagulating a part of dispersed oil balls at the vicinity of the bubbles, is caused, by the stirring treatment while cooling. The sauce-like food is also the one obtained by subjecting the product in the state in which bubbles are included by the stirring treatment while cooling, and the phenomenon of so-called demulsification of coagulating a part of the dispersed oil balls at the vicinity of the bubbles is caused, to a degassing treatment. In the coagulation of the part of the dispersed oil balls, the dispersed oil balls contact with each other, and a part thereof becomes into a sharing and united state to form the coagulation. The proportion of the bubbles is >=2% expressed in terms of v/v. The product is composed of 3-15 wt.% flour and/or starch and 2-20 wt.% oil and fat. The sauce-like food is a white sauce, and a processed food or a frozen product thereof is produced by utilizing the sauce-like food.
