PURPOSE:Unmatured herring roe with no specific texture as KAZUNOKO and soft roes collected from herrings in the Atlantic Ocean or in Europe are treated with specific inorganic and organic salts to give the roe having increased hardness and giving good texture. CONSTITUTION:The saline solution which is used in salt-gelling herring roe, when KAZUNOKO is produced in a usual manner, is combined with 0.05-1% of at least one selected from calcium sulfate, calcium chloride and magnesium chloride and additionally at least one selected from potassium aluminum sulfate, monosodium fumarate and at least one selected from organic acids such as citric acid, so that the pH of the solution is adjusted near the isoelectric point, i.e., 3.5-4.5 pH to prepare a saturated saline solution. The solution is used to treat unmatured roe or roe collected in the Atlantic Ocean or in Europe which are not palatable, because of their soft texture, to give hardened roe. |
