The invention relates to a method for controlling a kneading and mixing machine, if desired with the outlet devices, which are assigned to it, of the silos containing the ingredients, especially for types of flour and water, for the automated production of dough for bread or pastry articles following different recipes. The kneading and mixing machine is, to permit programming of its various speed ranges, connected to a time switch system and has sensors for measuring values indicating the state of the dough. Into the time switch system which takes the form of a programmable computer with an input keyboard there is input an identification key to call up a stored recipe and the program for following it, as a result of which the selected program is used to indicate the quantities and necessary state variables of the necessary ingredients or the said ingredients are called for by actuation of appropriate circuits of the outlet devices of the silos in question and are fed in prescribed quantities to the kneading vat with software being provided to take account of their continuously measured initial status values which are fed to the computer. During the entire mixing and kneading process, temperature values which are recorded in the vat by at least one sensor are continuously fed to the computer which evaluates them to obtain the desired values for the state of the dough in the kneading phase which are predetermined by the software and emits control commands for adaptation of the mixing and kneading process to the kneading machine.
