PROBLEM TO BE SOLVED: To provide the enzymatic properties and genetic information of aminopeptidase derived from Grifola frondosa that has been hardly isolated or purified, and to provide a method for efficiently producing the same. SOLUTION: This aminopeptidase is derived from Grifola frondosa, and has an optimal pH at 8.5, is stable from pH 6.0 to 10.5 at 45 deg.C for 1 h, has optimal temperature at 65 deg.C, is stable at 55 deg.C or lower, has such sustrate specificity as to act on leucine and phenylalanine, has a molecular weight of 30 kDa as measure by SDS-polyacrylamide gel electrophoresis, is inactivated by EDTA and phenanthroline, and is inhibited by bestatin. The enzyme that was inactivated by EDTA is activated by the addition of Mn2+, Zn2+, Cu2+, and Co2+. |
