<p>The process for the preparation of a purified solution of inulin from chicory juice consists in preliming the chicory juice to a pH not exceeding 11 and in then liming and carbonating it simultaneously and so that the pH of the juice does not exceed 11. The preliming makes it possible to obtain a juice which is easily filtrable and separable, whereas, by conducting the liming and carbonation simultaneously, this can be done at a relatively moderate pH, which minimises the losses of inulin due to its decomposition and to the decomposition of fructose and glucose.</p> |
