PURPOSE: A process and apparatus for production of germinated brown rice by continuously discharging harmful materials such as CO2 generated during the germination process while continuously supplying materials such as oxygen, etc. necessary for a germinating process are provided. Whereby, the generation of the radicle thereof is inhibited and uniform germination is achieved. CONSTITUTION: A rice seed is soaked in water at 15 to 20deg.C and germinated in water at 23 to 27deg.C in a first tank, and then a water germination and dry germination are repeatedly performed one or more times in the order in a second tank. Thereafter, the germinated brown rice is germinated in the atmosphere and then dried in a dry chamber. The second tank contains an exhaust apparatus for discharging CO2 from the tank. |
