Apparatus for cutting or polishing, adjustable to the profile of a straight section, for example a deformable cutting blade (18), intended to remove the fat from pork loins. The blade (18) is deformed by support guides (361,362,363,...) moving in directions (37) orthogonal to the blade (18). The blade is tightened by the blade-support frame (25), which descends through the action of its own weight and of a spring (39).
