摘要 PURPOSE: A method for producing anion fermented alcohol is provided, thereby the difficulty of fermentation caused by the presence of organic sulfuric compounds in anions can be solved, so that the anion fermented alcohol having higher alcohol content can be produced. CONSTITUTION: The method for producing the anionic fermented alcohol comprises the steps of: incubating a yeast (KCTC 1218) on a solid growth medium; transferring the yeast (KCTC 1218) in a liquid growth medium; inoculating the fermented culture of yeast (KCTC 1218) into anion extract juice containing sugar to produce the seed culture of yeast (KCTC 1218); preparing the anion extract juice by peeling, washing and extracting anions, and adding sugar into the anion extract juice; and inoculating the seed culture into the anion extract juice and incubating at 25 deg.C for 2 to 3 days, in which the solid growth medium contains 3g of yeast extract, 3g of malt extract, 5g of peptone, 10g of dextrose and 20g of agar in 1 liter of distilled water; the liquid growth medium contains 3g of yeast extract, 3g of malt extract, 5g of peptone and 10g of dextrose in 1 liter of distilled water; and sugar is added to the anion extract juice in an amount of 10 wt.% in total weight.
