The present invention relates to a manufacturing method of standardized fermented Alaska pollack with high quality using a response surface methodology. More specifically, it is verified that fermented Alaska pollack manufactured by the manufacturing method exhibits excellent properties in a sensory evaluation such as color, taste, flavor, texture, etc. in comparison with a commercial fermented Alaska pollack product manufactured by an existing recipe. Accordingly, provided is a manufacturing process of fermented Alaska pollack, which can manufacture standardized fermented Alaska pollack with high quality. The manufacturing method of standardized fermented Alaska pollack with high quality comprises the following steps: preparing Alaska pollack; salting the Alaska pollack with bay salt; washing the salted Alaska pollack and dehydrating the same to prepare an Alaska pollack ingredient; mixing the Alaska pollack ingredient, red pepper powder, garlic, a chemical seasoning, ginger, millet, and salted radish to obtain a seasoned ingredient; and aging the seasoned ingredient. |
