摘要 In the present invention, provided is a manufacturing method of ginseng, which preserves effective components to extract ginseng in maximum to lower a cholesterol level in ginseng by using a combination of a fermentation process and a production process of red ginseng to bring an improvement in cholesterol metabolism, which is a cornerstone of preventing cardiovascular diseases. The manufacturing method of ginseng comprises the following steps of: 1) removing the skin of ginseng raw materials, washing the same, and immersing the same in hypochlorous acid for approximately 30 minutes; 2) inoculating 1-3.5% of lactobacillus acidophilus based on the weight of the ginseng, and fermenting the same at 34-35°C for 2-3 days; 3) steaming the same in a steam pressure cooker at 95-98°C for 120-150 minutes; 4) primarily hot-air drying the same at 50°C-55°C for 240 minutes; 5) steaming the same in the steam pressure cooker at 85-88°C for 100-110 minutes; 6) inoculating 1-3.5% of acidophilus bacteria based on the weight of the ginseng, and drying the same at 34-35°C for 24 minutes; and 7) hot-air drying the same in a fermented state at 30-36°C for 240 minutes.
