PURPOSE:To provide collagen beads and a process for producing the beads. CONSTITUTION:The present invention relates to collagen beads prepared from an aqueous liquid of solubilized collagen and an aqueous solution of tannin and to a process for the production of the collagen beads. A bead-formed or spherical collagen bead having a double-layer structure holding an aqueous liquid or an oily liquid in the bead and having a solidified skin layer or a collagen bead uniformly solidified throughout the particle can be produced by adjusting the concentrations of the aqueous liquid of collagen and the aqueous solution of tannin and the retention time of the collagen bead in the aqueous solution of tannin. The use of a hardener enables the improvement of the heat- resistance, etc., of the bead. The collagen bead can be used as foods, immobilized enzymes, etc. |
