PURPOSE:A wood substance is treated with high-pressure steam under heating and extracted with a solvent after the pressure is lowered, to produce a woody flavor for beverage and food. CONSTITUTION:A wood substance from white oak or MIZUNARA (a kind of oak) is crused and treated with saturated steam of higher than 4kg/cm<2> pressure or with superheated steam of higher than 151 deg.C for longer than 30sec, then the pressure is rapidly or gradually lowered to give a swollen wood substance. Then, the resultant wood substance is extracted with a solvent such as alcohol, water or liquid carbon dioxide at room temperature or under heating for 1- 5min to obtain a wody flavor extract. The extract is prepared in a liquid flavor or a powder by drying and used as a flavor for flavor composition, liquors or cakes. |
