PURPOSE:To expand the application range for stem lettuce. CONSTITUTION:Stem lettuce is washed with water followed by removing leaves 2 except those at the head of the stem 1. This head is then cut off, the resultant stem 1 is skinned, and the stem body is cut in slices with a width of 50mm into plural 1st cut bodies. Each of the cut bodies 4 is longitudinally cut on the slice-cut surface into 2nd cut bodies, each of which is then cut in clappers into 50mmX50mm cut bodies for feedstock. Finally, the resultant respective cut bodies are seasoned with salt water and then washed away with water, and the resulting cut bodies are dried mechanically. |
