PURPOSE:To provide the subject composition exhibiting a sufficient aging preventing effect in a small amount of an emulsifier and giving a good crisp texture, containing a bread aging-preventing agent and exhibiting only one melting point of fats and oils on an endothermic analysis using a differential scanning calorimeter(DSC). CONSTITUTION:The objective composition contains a bread aging-preventing agent and exhibits only one melting point of fats and oils not having any transition peak in the melting zone of the fats and oils within a region of MP-20 deg.C- MP+15 deg.C on an endothermic analysis (rising temperature measurement). |
