PURPOSE:To obtain a high-quality solid roux seal-packaged and held in a tray- shaped container, prevented from the oil float and dew condensation on roux surface. CONSTITUTION:A hot-melted roux prepared by hot-mixing treatment of a feedstock comprising wheat flour, edible fat and seasonings is filled in a tray- shaped container, cooled at <=0 deg.C and solidified, immediately followed by leaving the solidified roux in the atmosphere at 30-60 deg.C and then subjecting the roux to sealed packaging together with the container. |
