PURPOSE: To provide a method for drying instant-cooking noodles without frying and a low-calorific, low-fat and dried noodle product which is preserved for a long period. CONSTITUTION: A dough is obtained by mixing flour and water, shaped into noodles and precooked with steam. This precooked noodles are dried with a flow of high velocity air at a temperature of higher than 130 deg.C to a moisture content of <= about 20%. This dried product is packaged as a brick and a small packet of seasonings is packaged together. This packaged product is preserved at ambient temperatures for long periods of time. As these instant- cooking noodles are returned with hot water to be used as a soup, a stew or a garnish. As these dried noodles produced without oil having low calorie and fat, they are good for health and is provided with a preferable taste, texture and appearance which can not be expected without frying. |
