PURPOSE:To obtain a solid soup soluble in hot water in a short time and useful for the instant dry food manufacturing industry by adding a foaming agent to a soup followed by freezing into a solid which is then lyophilized in a vacuum. CONSTITUTION:A foaming agent (e.g. carbonate, bicarbonate) is added to a soup, and, if needed, e.g. citric acid as a neutralizing agent is added to the system, followed by freezing into a solid, which is then lyophilized in a vacuum, thus obtaining the objective solid soup. |
