FIELD: medicine. ^ SUBSTANCE: water suspension of yeast cells is prepared. Endogenous enzymes of yeast cells undergo inactivation at 85-95C for 15-20 minutes. Further deactivated yeast cells are processed with exogenous enzyme complex represented by cultural fluid of micromycete Aspergillus oryzae F-931 of All-Russian Collection of Industrial Microorganisms or concentrated enzyme preparation obtained out of cultural fluid of micromycete Aspergillus oryzae F-931 at 48-52C and natural pH for 4 hours with constant stirring. Further exogenous enzymes are inactivated at 85-95C for 15-20 minutes, and obtained enzymolysate is dried in dispersion dryer. ^ EFFECT: improved quality of yeast enzymolysate. ^ 2 tbl, 6 ex |
