PROBLEM TO BE SOLVED: To provide a revolutionary method for soak-treating beans capable of bringing beans into a soaked condition in a short time through a high pressure treatment in water, and simultaneously sterilizing bacteria or microorganisms therein through the high pressure treatment. SOLUTION: This method for soak-treating beans comprises soaking beans such as red beans, soybeans, white lupine beans or peas in water followed by subjecting the resultant beans to >=1,000 atmospheric pressure treatment in the water. |
