Citric acid was produced by a mutant yeast, Candida zeylanoides ATCC 20367 which produced little isocitric acid in the presence of Fe++ and lacked glycerine assimilation. Thus, ATCC 20367 was cultured with shaking at 30≦̸C for 96hr in a medium contg. n-paraffin, NH4Cl, KH2PO4, MgSO4, MNSO4, ZnSO4, FeSO4, CuSO4, and thiamine with addition of glycerine. Citric acid production was 73mg/1 by adding 10 mg/1 FeSO4. 7H2O, whereas, without FeSO4. 7H2O, production was 65mg/1.
