Preparation of apples comprises cooking them under vacuum at 90 deg C for 1 hour 30 minutes. Cored apples are dipped in caramel then sealed in a bag under vacuum. They are cooked in hot water at 90 deg C after which they are served with a caramel sauce made with salted butter. |
