PROBLEM TO BE SOLVED: To obtain a pretzel having a thin shape like a potato chip, an appearance with uneven blisters, and a crunchy comfortable texture. SOLUTION: A biscuit dough in a sheet shape with 0.5-1.5 mm thickness before baking is dipped in an alkali solution at >=80 deg.C for 0.1-8 sec, and the dipped dough is baked to provide the objective pretzel. The alkali solution can be the one obtained by forming an alkali base usable for the usual production of the pretzel into an aqueous solution, and the dipping of the formed dough into the alkali solution, or the method same as the dipping, e.g. spraying, is suitable as the method of the alkali treatment. The temperature of the alkali solution is preferably >=80 deg.C, more preferably >=90 deg.C to form blisters on the product, to suppress a powdery feeling and to provide the crunchy texture.
