A method of increasing the solubility of flavonols comprises mixing together a flavonol-containing composition and an anthocyanin-containing composition. The flavonol may be quercetin, kaempferol or myricetin or glycosides thereof and the anthocyanin may be malvidin, cyanidin, delphinidin, paeonidin, pelargonidin, polymeric anthocyanins or leucocyanidins or glycosides thereof. The anthocyanin-containing composition may be a fruit juice, vegetable extract, wine or dealcoholised wine. The flavonol-containing composition, which may be an ethanolic solution, may be dissolved in an aqueous anthocyanin-containing solution. A dry composition may be prepared from the resulting solution. The compositions prepared by mixing a flavonol-containing composition and an anthocyanin-composition may further comprise one or more of anti-oxidants, flavouring agents, sweeteners, vitamins, minerals and aspirin. |
