METHOD FOR PRODUCING ALPHA-GLUCOSIDASE INHIBITOR

PROBLEM TO BE SOLVED: To provide a method for producing an α-glucosidase inhibitor which can easily be taken out, does not have a smell and exhibits a strong inhibitory activity. SOLUTION: This method for producing an α-glucosidase inhibitor is characterized by subjecting steamed or boiled beans belonging to the genus Phaseolus to a solid culture using a mold under a condition having a salt content of <=5 wt.% and then extracting the culture product with >=50 deg.C water.
