PROBLEM TO BE SOLVED: To provide a hypocholesterolemic agent that comprises the food constituents having excellent hypocholesterolemic action. SOLUTION: The objective hypocholesterolemic agent is a composition obtained by treating yolk with supercritical carbon dioxide thereby reducing the neutral lipid and cholesterol. In this composition of the hypocholesterolemic agent, the yolk phospholipid and the yolk protein characteristically are in the form of a lipoprotein.
