PURPOSE: To provide a pasta which is stably stored under a non-freezing condition and is provided with a texture, a color and flavor which are equal to or more excellent than communicably available freshly frozen pastas. CONSTITUTION: The moist pasta which is stably stored, uncooked or partially cooked and the freshly extruded or sheeted pastas are processed by steam so as to harden a pasta surface, the steam-processed pasta is immersed in a solution including an acidifying agent and/or a humidifying agent and partially dried. Then, surface moisture is removed, the pasta is sealed in a package material so as to be heat-sterilized through the use of conventional heat process or a microwave processing inside the package material. |
