摘要 The present invention relates to a method for preparing a Ledebouriella seseloides jelly and a Ledebouriella seseloides jelly prepared thereby, wherein the method can produce a jelly retaining the nutrients of Ledebouriella seseloides while reducing the bitterness of Ledebouriella seseloides, and therefore the jelly can serve as a functional food for patients with obesity or as a meal replacement for normal people. The method for preparing such Ledebouriella seseloides jellies comprises the following: 1) a first step in which Ledebouriella seseloides powder is dissolved in boiling water, followed by filtering out of undesirable materials using a muslin cloth to produce an extract of Ledebouriella seseloides; 2) a second step in which Ledebouriella seseloides powder and a buckwheat powder are boiled in water, and then Ledebouriella seseloides is taken out while the buckwheat powder is further boiled to produce a tea of Ledebouriella seseloides; 3) a third step in which a mixture in which the extract obtained in the first step, the tea obtained in the second step, and a mung bean powder are thoroughly mixed in a pot and is boiled on medium heat under stirring, and once coagulation starts, the mixture is kept on low heat under continuous stirring; and 4) a fourth step in which once the mixture in the third step becomes glutinous, the heat is turned off while the stirring is continued, and the mixture is stored and refrigerated in an open container.
