In the open-bottom tank used for thickening, the gelatin draws off down through the divider and slicer and is loaded here by hydrostatic pressure less than in the upper reaches of the tank. Thus the gelatin accumulates here without the milk penetrating or disturbing the dense gel layer. Back pressure is produced at the bottom of the tank by whey in another vessel with an overflow just below the milk level in the coagulator. |
