[Also in Division C6] The flavour of foodstuffs or beverages comprising a fruit or fruit juice, vegetable or vegetable juice, or beer is preserved by hermetically sealing the foodstuff or beverage in a container with sufficient of at least one of the amino acids _lysine, ornithine or histidine, or a salt thereof. The container contents are heat sterilized after sealing in vacuo. Ascorbic acid, in the form of sodium isoascorbinate, may also be added. The preservation of peaches in syrup, orange juice, tomato juice, a carbonated drink containing orange juice, and beer, is exemplified. |
