PURIFICATION OF ANTHOCYANIN PIGMENT

PURPOSE:To obtain an anthocyanin pigment freed from foreign odors such as that of a Japanese radish or that of a turnip and suppressed in the formation of foreign odors during storage. CONSTITUTION:A solution of a red Japanese radish pigment and a solution of a red turnip pigment are treated by contact with an anion exchange resin to remove impurities therefrom.
