PURPOSE: Provided is a manufacturing process of a burger using duck-meat, therefore everyone can take the duck-meat or the burger easily regardless places. CONSTITUTION: The manufacturing process of a burger using duck-meat comprises the steps of: thawing frozen duck meat to its surface temperature being 10 deg.C or less; finely cutting the thawed duck meat and fresh vegetable(onion, garlic, ginger) and a shiitake; mixing the prepared duck meat with other ingredients; forming a patty with the mixture and boiling it; passing it through a far infrared grill; and quick-freezing and packing it. |
