PROBLEM TO BE SOLVED: To obtain an eel processed product which makes the best use of fat with high nutritive value in view of the fact that a processing method of eel in many cases has comprised removing fat from eel through burning or steaming and seasoning with e.g. soy sauce to consequently throw away almost nutrient contained in the fat. SOLUTION: This eel processed product is obtained by frying with oil the body, head, bone and guts of eel followed by further frying the resultant product adding fermented soybean paste thereto and then boiling the resultant product down adding leek, grinded sesame and sugar thereto. |
