In a skinning machine for double fillets of fish, there is arranged at a slight distance above an endless conveyor belt 11 for receiving of the fillets on their skin side, in symmetrical manner, a skinning tool with a pair of skinning knives 21, 25 with outwardly directed cutting edges running parallel to the surface of the conveyor belt, such that these enclose a passage 24 for the [illegible] fin's fin holder. From the [illegible] 22, 26 of the skinning knives, which bound the passage, there extend in a direction opposite the feeding direction two guide strips 31, 32, which form with each other a slit, and whose edges facing the conveyor belt run parallel to it and is configured as cutting edges. Above the skinning knives on both sides of the guide strips there are located driven pressing belts, running in synchronisation with the conveyor belt, at the feed end, to lie against the meat portions of the fillets. <IMAGE>
