POLYNUCLEOTIDE ENCODING NEOAGAROBIOSE PRODUCTIVE ENZYME AND USE OF THE POLYNUCLEOTIDE

PROBLEM TO BE SOLVED: To clarify a polynucleotide sequence, or the like, encoding the amino acid sequence of β-agarase and express a polypeptide having β-agarase activity by making use the clarified results and to use the results for a method for selectively producing neoagarobiose.

SOLUTION: The polynucleotide encodes the specific amino acid sequence of the polypeptide that acts to selectively split agar-agar or a neoagarooligosaccharide of tetrasaccharide class or higher into neoagarobiose. A method for producing β-agarase and a method for producing neoagarobiose each utilizing the above clarified results are also provided.
