摘要 Novel compounds of the formula <FORM:1057446/C2/1> wherein Y represents C2- 18 alkyl, (C2- 18)-1-alkenyl or arylmethyl in which the aryl residue contains up to 12 carbon atoms, and salts thereof, are prepared by reducing or dehydrating a compound of the formula <FORM:1057446/C2/2> wherein Z is a C1- 17 alkyl group or an aryl group of up to 12 carbon atoms as appropriate, followed, if desired, by salt formation. The starting materials may be prepared by treating kojic acid with oxygen in the presence of a noble metal catalyst at a pH of at least 10 to form comenic acid, decarboxylating the latter to form pyromeconic acid and further reacting the pyromeconic acid with an appropriate aldehyde at a pH of at least 5.ALSO:The flavour and aroma of fruit juices, wines and liqueurs are enhanced by the addition thereto of pyromeconic acid derivatives of the formula:- <FORM:1057446/C6-C7/1> wherein Y represents C2- 18 alkyl, (C2- 18)-1-alkenyl or arylmethyl in which the aryl residue contains up to 12 carbon atoms. Examples describe the treatment of pineapple and grape juices, orange drinks, sherry wine and orange liqueur.ALSO:The flavour and aroma of canned and frozen fruits and vegetables, meat and fish products, cereals, macaroni and noodle products, soups, sauces and seasonings, prepared dressings, breads, chocolate and vanilla products, candies, ice cream, cake mixes, cookies, pies, desserts and flavour extracts are enhanced by the addition thereto of pyromeconic acid derivatives of the formula:- <FORM:1057446/A1-A3/1> wherein Y represents C2-18 alkyl, (C2-18)-1-alkenyl or arylmethyl in which the aryl residue contains up to 12 carbon atoms. Examples describe the treatment of chocolate fudge, creme candies, chocolate macaroon mix, pineapple cake mix, angel food p cake mix, commercial yellow cake mix, chocolate bars and maltol. The above pyromeconic acid derivatives may also be used to inhibit the growth of Staphylococcus in milk. Baked goods such as bread may be preserved by mixing the pyromeconic acid derivatives with the dough, sprinkling these derivatives on the surface of the goods or by incorporating these derivatives in the food wrapping material.ALSO:An antimicrobial composition comprises 2-ethyl pyromeconic acid, 2 n-propylpyromeconic acid and/or 2 vinyl pyromeconic acid, and/or a salt thereof, and a pharmaceutical carrier Formulations may be for oral, topical or parenteral administration, e.g. tablets, powders, salves, creams, suppositories, solutions, suspensions or emulsions. A perfume composition comprises 2-ethyl-pyromeconic acid or a salt thereof and a perfume base, e.g. floral base cologne or maltol.
