摘要 PROBLEM TO BE SOLVED: To produce a cellular konjak capable of rapidly permeating a seasoning therethrough even under strongly alkaline conditions and carrying out various seasonings without using a special additive. SOLUTION: An alkali carbonate or an alkali bicarbonate or a mixture thereof is added and mixed with a viscous sol prepared by swelling a konjak flour (prepared from a tuber of devil's tongue) with water to alkalinize the viscous sol. An organic acid in an amount insufficient to react with all of the CO3 groups in the alkali carbonate and alkali bicarbonate is added to expand the viscous sol. The resultant sol in the expanded state is then thermally coagulated. A powder of an edible mushroom, preferably a powder of Grifola frondosa S. F. Gray is blended in the konjak to afford a cellular konjak, comprising open cells, in which the open-cellular cavities are scattered therein, and further the powder of the edible mushroom blended therein.
