PROBLEM TO BE SOLVED: To solve the problems of the occasional breakage of noodle strings and the deterioration of the deliciousness and the chewability of the noodle inherent to the conventional noodle forming process comprising the drawing in one direction to perform the forming of the noodle while abruptly breaking the noodle texture. SOLUTION: The distance between the upper and the lower hanging bars is maximized at the intermediate point between the starting end to the delivery end of a transfer conveyor and the transfer speed of the lower hanging bar is controlled according to the transfer speed of the upper hanging bar to draw the noodle strings 10 while applying tension and relaxation to the strings. The moving apparatus for the pull-down part is provided with a plurality of lower rail lifting stands 9 placed at prescribed intervals in such a manner that a timing belt 7 having feeding pins for the lower hanging bar at prescribed intervals is declined from the starting end to the intermediate part and inclined upward from the intermediate part to the delivery end. |
