Drum is charged with meat, evacuated to 80% starting pressure and then connected to pressure lines to produce slight over-pressure. - The drum rotates slowly, and during its stationary periods it is held at slight underpressure. The over- and underpressure cycle is repeated and has a kneading effect on the meat so that juice and collagens emerge and are forced back in only to re-emerge etc. No additives are required, the proces is shorter and the milling operation less vigorous.
