<p>Curds containing albumen are produced in a milk fermenter with albumen destabiliser and bacteria culture feed and passed to a coagulator with heating jacket. Channels running parallel inside the coagulator are elliptical and have straight line generatrices in the main axis of the ellipse running parallel in the channels. The channel entries lie in a thermostat chamber which can be cooled with water to adjust the entry temperature. Height to width in the channels should be 1:3 to 1:12. Each channel can be heated by hot water to ensure uniform consistency of the product. Flow is balanced out by means of the channel design, as well as uniform temperature effects and thus the consistency of the curd product.</p> |
